The team of Aptera Solutions is by the side of organic farmers throughout the year, providing them with certified knowledge, practical solutions and beneficial sustainability advice.
In this way, following a strict organic farming protocol that contributes to the production of an organic olive oil of exceptional quality, with high nutritional value and unparalleled organoleptic properties.
The quality of the soil, the proper cultivation, the irrigation, the fertilization, the pruning and the protection of the olive trees and the olives from various enemies, always taking into account the environment, the biodiversity and the sustainable development, are the ingredients of success.
From the beginning of October, the whole Aptera Solutions team lives and breathes for the new harvest and the fresh olive oil.
Overseeing every stage of the production process, selecting the best ripening stage of the olive fruit to start the harvest, using the most soft tools so as not to damage the fruit and the tree, and then putting the fruit into boxes and quickly transporting in to the one of the strictly pre-selected olive oil mills we work with.
Then, the immediate processing of the olive fruit, combined with the modern pressing methods that are applied, and with temperatures that do not exceed 27°C at any stage of processing, make this olive oil unique in terms of aromas, unparalleled taste and excellent quality.

Collection
Olive harvesting is realized using various mechanical means, ranging from big olive vibrators to small electrically-powered harvesting rods. To maintain its quality unaltered, it is crucial for the olive fruit to be collected in perforated plastic crates, placed in the shade or in cold store during the day and taken for pressing obligatorily the same day.
Cold pressing
Once the olive fruit reaches one of the 5 selected olive mills of the team, the first thing is to remove all foreign bodies. Then, the olive fruit is washed and right after the cold pressing takes place, which lasts about 30 minutes, while the temperature in the mill does not exceed 27oC at any stage. The low temperatures throughout the entire process of olive pressing (puncturing, centrifugation, sorting) are necessary in order to maintain intact the aromas, taste and valuable nutrients of the olive oil, such as antioxidants and polyphenols.
Tasting test
Each batch of olive oil produced is sent to the chemical laboratory to examine basic chemical properties, such as acidity and peroxides, and verify the absence of pesticides throughout the production process. Then, it goes through a specialized tasting test in order to choose only the olive oils with the exceptional organoleptic properties we are after. The organic olive oil we are producing is fruity (> 5), bitter (> 2.5) and pungent (> 3.2). We do not hesitate to turn down olive oils that do not live up to our expectations, even if this is not to our benefit. Besides, it is not compromise that we are known for.
Storage and Bottling
The selected olive oils are filtered immediately and stored in tanks made of stainless steel, in a strictly protected and air-conditioned space. The dark space, the temperature that does not exceed 18oC, as well as the nitrogen added in every tank help the organic olive oil maintain its exceptional properties for a long time. Next, it is bottled in dark-glass bottles of 500ml and after sticking the client’s label with the necessary details, such as the MHD, Lot, Nr and date of harvesting, pallet packing takes place. Finally, the product is sent to its end destination on closed trucks, so as to have the temperature and light conditions under control.
